Zucchini Bread

2 cups grated zucchini
3 eggs, beaten
3 teaspoons vanilla extract
2 ¼ cups sugar
1 cup bread crumbs
1 teaspoon baking soda
1 teaspoon salt
1 ½ tablespoons ground cinnamon
3 cups all-purpose flour
1 cup coconut oil
1 cup chopped pecans (optional)

1. Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees
2. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl
3. Remove skin from zucchini. In a large bowl, beat eggs, oil, vanilla, and sugar. Stir in zucchini and nuts Poor into baking pans.
4. Bake for 50 minutes or until tester in the center comes out clean. Cool 20 minutes and then remove from pan.

Poor Man’s Crab Cakes

2 1/2 cups grated zucchini
1 egg, beaten
2 tablespoons butter, melted
1 cup bread crumbs
1/4 cup minced onion
3 teaspoons Old Bay Seasoning TM
1/4 cup all-purpose flour
1/2 cup coconut oil for frying

1. Remove skin from zucchini. In a large bowl, combine zucchini, egg, and butter or margarine. Stir in seasoned crumbs, minced onion, and seasoning. Mix well.
2. Shape mixture into patties. Dredge in flour.
3. In a medium skillet, heat oil over medium high heat until hot. Fry patties in oil until

golden brown on both sides.
